yummy baked carrots

tuesday’s meals continued…

snack #3: 2 red vines

dinner: one spicy italian sausage grilled on george, black beans, and baked carrots

i didn’t think i’d want to cook a solo meal, but i’m glad i decided not to be lazy. the baked carrots were so good. i used this recipe but with some changes. they were a little sweet and a nice complement to the spicy sausage. i’m so addicted to italian sausage- there are always some links in my freezer. i promise to grab chicken sausage next time.

baked carrots for one

2 carrots sliced
1/2 tbsp butter
1/2 tbsp brown sugar
pinch of nutmeg
pinch of salt

combine brown sugar, nutmeg, salt and a little water in bowl. toss in sliced carrots and pour into baking dish. cut butter into small cubes and place on top of carrots. bake at 350 degrees for 10 minutes. enjoy!

after dinner i had a tangerine and then a few hours later i had a couple bites of chocolate pie. i’m really in the mood for an indulgent dessert and that pie was not doing it. after a couple bites i decided it wasn’t worth it so i threw it away and decided that if i still want dessert i’ll treat myself to something better tomorrow.
