a kinda quiche-y calzone

FINALLY! i finished the damn puzzle! you don’t understand how exciting this is! here’s a pic because it’s getting crumbled up and put back in the box never to be seen again! you didn’t think i was going to put this up on my wall or anything did you? uh…not that that there’s anything wrong with that…if you’re 12!

i slept in today, so breakfast was more like lunch. i may be addicted to yoplait whips.

later on, i snacked on carrots and apples with peanut butter while watching ratatouille. it was a cute movie, but i’m sorry…the swarm of rats were gross…even if they are just cartoon rats! ick. i hate rats! you’d think i’d be immune to them considering how many i saw on a daily basis when i was in college….but ewww! so gross! haha! sorry, sorry, rat talk= not appetizing.

dinner was yummy though! i made individual calzones. i ❤ store bought whole wheat pizza dough- it makes life so much easier. i filled my calzone with spinach, broccoli and mozzarella cheese. i didn’t use a lot of cheese, so i used a tiny bit of egg wash (for the dough) to bind the filling together which resulted in a fluffy filling instead of a gooey cheezy one. either one would have been good but this was a nice surprise. kinda quiche-y.

spinach & broccoli quiche-y calzone directions:

divide store bought dough into thirds, and roll out each piece into circles like you would a pizza. in a bowl, combine raw spinach, steamed broccoli, mozarella cheese and a beaten egg. place mixture on bottom half of dough. fold top of dough over mixture to form half moon shape. place on a baking sheet dusted with corn meal. go around the edges with a fork to seal and pierce the top a few times to release steam while baking. brush with egg wash. bake at 375 degrees for 20 minutes.

and i had a small cup of neopolitan ice cream for dessert…aren’t the colors so pretty!?
