delicioso baked plantains

breakfast: nonfat plain yogurt w/ granola cereal, shredded coconut, and some fall sprinkles just for fun 😀

lunch: yummy red grapes and a free sample quaker simple harvest granola bar (not pictured) while at the mall…i’m glad i had the bar in my purse cus the natick collection has lots of yummy places to pick up treats (finale fruit tarts! sel del la terre brownies! the blended iced coffees at nordstroms…mmm. i guess one perk of being broke is that i have yet another reason to walk quickly past bakery cases.

dinner: (i didn’t follow menu plan, i brought tommy home a grinder from the food court instead) i had leftover spaghetti squash w/ sauce and two turkey breakfast sausages grilled on the george.

dessert: sweet baked plantains. so SO SO good! i considered drenching these in condensed milk but thought better of it and came up with a healthy but still delicious alternative to get these nice and sweet and delicious

sweet plantains

1-2 plantains
1/4 cup (unsweetened) soy milk
2 tsp brown sugar
1 tbsp shredded coconut

slice up plantains and place in single layer on baking pan. combine milk and sugar in bowl and pour over plantains. bake at 400 degrees for 20 minutes. then top with coconut and broil until brown and toasty.
