one hot potato

for dinner, we had loaded baked potatoes and a garden salad as planned. i use alton brown’s recipe for baked potatoes and they turned out so delicioso. i know you’re thinking who needs a recipe for a friggin’  baked potato. but really, try it next time…the man is a genius. i still find him annoying but unfortunately i’ve gone through all the other food network dvds at the library (<3 ina) so now it’s down to alton and rachael.

anyway…back to the potato. i topped mine with with plain chobani, salsa and green onion. next time, i’m so loving greek yogurt in place of sour cream and it’s nice to have one less thing to buy. the salad was romaine with veggies and a little cheese and bacon dressed with annie’s honey mustard vinaigrette which is now my new favorite dressing.

i’m still full from dinner but i’m craving something sweet so i’m drinking a little bit of coffee with chocolate silk.

    Hi!
    I’ve discovered your blog today and oh my your eats look delicious!
    and I totally agree with you on Korean sweet potatoes. THEY ARE THE BEST! esp when roasted… but I always have to steam them since I have no idea how to roast them.. lol ;]
    have you tried purple swt potatoes? they are really good too!

    Hi Sue- I just found your blog today and I absolutely love it! Can’t wait to read more!
    ps- I’m also just about 5”1- well 5 feet and 3/4 of an inch if we’re going to be honest but I round up 🙂 and have pretty much the same goals as you- would love to get down to 105-110 eventually but hoping to hit 115 by mid April. Hopefully we can help motivate each other to eat well and exercise so we can reach our goals soon!
