i must have been hungry because i inhaled my dinner and that’s after finishing off the last of my korean yam while making dinner.
for dinner, i made stuffed peppers with the leftover sardines i had in the fridge. i just made the stuffing up as i went along, and i was worried about the edibility (did anyone watch how i met your mother today?) but it turned out really well! i also had glazed carrots and cottage cheese on the side. this bag of carrots is especially sweet– so glazing them just turned ’em into candy. seriously good stuff. hooray for success in the kitchen!
here’s how i made my stuffed pepper…
boil the bell peppers for a bit while making the stuffing so they soften up. for the stuffing, mix 1/2 block tofu, 1 cup cooked multigrain rice, diced onion and some canned sardines. season mixture with s&p, and stuff 2 (or 1 freakishly long) bell pepper/s. then bake the stuffed peppers at 400 degrees for about 25 mins which was all i could wait since i was hungry!
you can use any meat or veg in place of the fish or none at all cus the best part was the texture of the soft tofu and grain-y rice together- yum 🙂 don’t you love when cooking experiments actually work out?
