when i dip…

dinner was stir fried veggies, baked tofu and brown rice. it really wasn’t that exciting. what was exciting was the dip i accidently created while trying to make a marinade for the tofu.

i wanted to make thai peanut sauce which usually consists of pb, coconut milk (a gazillion calories) and spices. i didn’t have any type of milk, so instead i used greek yogurt which was the best decision ever! i’ve seen this combo around but never realized how good it would be! to give it a spicy kick, i added hot chili oil, paprika and some random goya sauce (kind of like a relish with chili peppers, onion and cabbage). the result was a thick, creamy and healthier version of one of my most favorite foods ever. this has me totally convinced that greek yogurt goes well with everything!

the sauce was too thick to cook the tofu and veggies with (i tried anyway) but it was perfect for dipping raw veggies into. after my first taste i made myself a little bowl of stir fry veggies i had cut earlier. i ended up going for thirds…oops.


i eventually controlled myself long enough to make and eat dinner and even though i was stuffed (with a small garden no less) i managed to make space for one more spoonful of dip with sliced apples. 


yum! sometimes i think the only reason i even like peanut butter is because it reminds me of thai peanut sauce. i’m a little obsessed with it! i even made more for tomorrow after finishing the apple slices 🙂 *so excited*

earlier in the day i snacked on the rest of my luna bar…


i’m failing the whole going to the gym thing but i enjoyed the self “slim down” exercises on this month’s tear out cards so much that i tore them out of all my old issues and have been doing them throughout the day. i only have one weight to work with (i have no idea how i could have lost a dumbbell) so until i buy a new one, i can only do a handful of them but anything is better than nothing, right? hopefully i’ll unlazify myself and get some cardio as well but i’m glad i found something i can do at home too.

    I love love love thai peanut sauce. and thai food in general. great creation- i’ll have to try it!
    i’m not sure whether to answer your question on my blog or yours, so i’m doing both 🙂 yes i am going to the blogger meet up in boston and i would lvoe to meet you! i’m shy and awk in situations like this too, but we’ll have each other, right? you should come! it monday night, the 16th. let me know if you want to info and i can give it to you. you should still email Tina though, she’s making reservations and needs to know how many are coming
