sweet potato curry!
i’m having an incredibly lazy sunday. i spent most of it lying on the couch and not doing much of anything at all! when i started to get hungry, i munched on puffins straight out of the box (pouring milk seemed like way too much work).
i finally worked up some energy and started on our late lunch/ early dinner. i had half an apple while cooking…
i made inna’s indian meatballs. i’ve been thinking of them ever since i saw them on her blog- and they did not disappoint!
my “curry” was thick and lumpy so it was more of a daal consistency- perfect for scooping! i ended up eating two meatballs and scooping every last bit of sweet potato up with some very authentic naan/sandwich thins.
you must try out inna’s recipe! it’s delicious and extremely filling! and you can adjust the spices to match your own taste. like many of you, i cannot follow a recipe for the life of me, so i made some substitutions. the biggest one being that i steamed and pureed 2 sweet potatoes, 2 carrots, and half an apple instead of just sweet potato since i like a sweet and spicy combo- i guess more like a japanese curry. i cooked the meatballs completely through before putting them in the sauce, and also had to substitute spices according to what i had around- i used a lot of cumin and paprika plus dashes of other spices that are normally found in curry powder. the dish turned out great but next time i’ll be sure to puree the mixture a bit more and finish off the meatballs in the same pot as the curry.
i’m so excited to eat the leftovers 😀
although that was my only real meal of the day, i don’t think i’ll be eating another since it’s already 8 and i’m not hungry yet…
i do have these “snacks” waiting for me though…
