I FINALLY TRIED BARNEY BUTTER!

and it was just as delicious as you all told me it would be. ahh! i’m going to be so sad when these two packets are gone 😦

i had my first taste of barney butter in this lovely sandwich- i think i’ve seen the pb + spinach combo on a few diff blogs, so i don’t know who to credit but it was so great. totally my kinda sandwich!

lunch: whole wheat bread smeared with half packet of barney butta, pink lady apple slices, and spinach!

i can’t wait to eat this again. and again. and again!

i had to run out the door, so i didn’t get a chance to eat a bigger lunch. but i did bring along a cookie and the rest of my cantaloupe to enjoy on the road.

go me! i actually mailed out a card- before the holiday for once!

for dinner, i tried out the ginger beef recipe from the low fat, low carb cooking class that i took a few weeks ago.

this recipe called for a full cup of minced ginger! that seemed like a bit much, i used more like 1/4 cup and the dish still had sooo much flavor. i threw in some green beans with the beef and ate it alongside shredded red cabbage and brown rice. this angle makes it seem like i ate a boatload of rice!

i’ll be making this dish regularly since it was so easy and tasty…next time i’ll throw in more veggies. i actually have a few new recipes i’ll be trying soon so i guess a slow week isn’t so bad- it leaves me lots of time to spend in the kitchen. πŸ™‚

    wow that IS a super intersting combo of a sandwich!!! I’m surprised it tasted super good, but I guess I can imagine it. πŸ™‚ Now you’re inspiring people to make yummy food Sue!!

    I just got my Barney Butter packets today and I am so excited to try them! Your sandwich looks oddly delicious! I would be nervous to try the spinach in that combo but you make it looks good!

    SO jealous of BB!!! UK is so behind. the dinner looks terrific – i am a garlic lover, but a full cup??? wooah. i know that korean food has a ton of garlic – i once watched on TV in japan that koreans consume a ridiculously multiplied amount of garlic compared to any other nation! good thing it’s so good for your health πŸ™‚

    A CUP of minced ginger? Wowza – I think I would have scaled that down too πŸ˜‰ It looks yummy!
