patty cake

wow i have no attention span! i started this post a few hours ago, walked away from it and didn’t realize i clicked post!

so if you were wondering what the pic is…that’s my dinner. i made a spicy chicken cakes with aoili from the low fat, low carb class i took. these things are so good! if you haven’t noticed, i’m obsessed with things that are shaped like burgers. i also had roasted veggies (carrot, parsnip, and potatoes) on the side.


i of course had to made them a little less low fat, low carb by coating them in bread crumbs. delish! i went a little garlic crazy in the aioli, so i had a carrot to finish off dinner.


ohh and i can’t forget dessert.

i had not one, but two easter treats. this is the last of my chocolate other than the rooster, so there should be a little less of that in my daily posts.


i totally didn’t get that the egg is supposed to be humpty dumpty til now! now the egg face makes so much more sense!

alright, i’m really really going grocery shopping tomorrow. good night!

    It seems like those classes were such a good investment for you and Inna! Parsnips are my favorite veggie to have roasted 🙂 Your dinner looks awesome.

    Spicy chicken cakes sound really yummy! You do such a great job of experimenting with different-ingredient burgers. I need to branch out from just veggie & turkey burgers.

    I just had a look at your post on the low fat, low carb class and it looks great! Do you generally try to cook low fat/carb?

    Oh I thought that chicken cake was a falafel.

      i didn’t know you liked falafel…I wouldn’t expect that from a hummus hater.

    your cooking classes teach you some great stuff! and breadcrumbs is all good 😀 😀 i hardly ever make burgers, but always drool over them on other blogs… i think i’m just too lazy!

    i like crispy falalfel. if it’s mushy it reminds me too much of hummus
