leftover love!

the leftover salmon from lunch made a great addition to dinner. we had whole wheat angel hair with alfredo sauce. i made the sauce as healthy as alfredo can be (soy milk, very little butter) but i still didn’t want to mix everything up in it..so i had the broccoli on the side and just poured a little over the pasta.

would you believe i still have another piece of salmon left? that was a big piece they gave me 😀

and here’s a different shot so i can show off our new place mats. tommy picked them out, i think he did a good job!

    I love alfredo sauce – using soymilk is a good idea; I should give it a try.

    This is totally my ideal meal 🙂 But I would probably have a bigger portion, haha! They don’t even look like leftovers!
