vegan cookies and more!

i started my day with a cabot chocolate raspberry greek yogurt, sliced bananas, and almonds! it’s like dessert for breakfast but way healthier!

i never posted all the baked goods i was busy baking last week…so here’s a short recap:

mocha chip and carrot raisin muffins from vegan with a vengeance: these are both definitely breakfast foods, they aren’t very sweet and were so good on the first day! they kind of went downhill from there since i didn’t store them in the fridge–but they were still perfect to crumble over yogurt. neither had amazing flavors though- the mocha chip could have tasted more coffee-ish, and the carrot raisin needed more spice.


moving along: eat, drink & be vegan’s you got peanut butter in my chocolate cookies, i had to make a second batch because tom gobbled up the first one so quickly. these are so yummy and so easy to make….


next up we have ed&bv’s white chocolate macadamia cookies and apricot almond cookies adapted from the same recipe. i threw in some chopped dried apricot into some of the white chocolate cookies too…they were a great addition to the mix! tom said he liked the dough (i used cashew butter instead of macadamia butter)…here’s what melinda had to say:

“well they were all good. but there was a tan one with a big white chunk in the middle, so i was like hmmmm… what is this? and then i bit in and it was a big yummy piece of white chocolate with yummy dough and bits of dried apricot! that one was my favorite.”


next are the mint chocolate melties. what’s not to love about mint chocolate?! i think these were the only cookies i baked that didn’t require nut butter! chewy and yummy!


and finally we have dreena’s super charge me! cookies. what’s left to say about these? amazing! these were nay’s favorite…


here’s what he had to say about all the cookies: “they are ooey gooey munchy crunchy vegany crumbly cookies. one of which almost choked me with strange mint like toppings. my favorite were the oatmeals with the raisin/coconut.”



haha funny pic of nay (who, ladies, is single and straight btw). ed could not be reached for comment on his cookies at press time. i will say that if i find out he threw them out, he is dead to me!

my personal favorite were the almond apricot. i follwed the white chocolate macadamia recipe and subbed almond butter for macadamia butter, and obviously almond and dried apricot for the chocolate and macadamia. really good! i sent those to my lil sis so i’ll have to wait for her review of those and everything else.

    woah your friends are being spoilt with all this fantastic food!! i have to try these recipes now, the apricot/white choc sounds soooo yum.
