must eat again!
i loved my lunch. i made greek nachos with food should taste good multigrain chips, hummus, veggies and feta. i need to add tabouli next time, that would be so good!
for “dessert,” i had some dried mango and a banana
dinner was low key but pretty exciting since i tried two new foods. the first being a sharon inspired tofu sandwich! yum! the second was a purple yam!
my tofu sandwich was made with baked tofu slab, cucumber slices, bean sprouts on whole wheat bread spread with peanut butter and sriracha. i can’t wait to eat this again!
the purple yam/ sweet potato was amazing as well. it tasted exactly like a korean yam! maybe even sweeter? it had a wonderful honey-like sweetness…i can’t believe i’ve never had one of these before, i’ve been missing out!
after dinner, i baked a batch of not healthy at all chocolate chip blondies for tommy, and had a “sample” to make sure they turned out okay…i’ll probably have another sample tomorrow, so i’ll post a pic then 🙂
