sweet potato lentil chili
i’ve been meaning to make this chili recipe from eat, drink & be vegan for over a week now. i even had the veggies all prepped to throw in the pot, but with the warm weather, i just wasn’t in the mood to cook or eat it. well, the weather was much more chili/soup/stew friendly today, and with our windows open, the apartment was nice and cool and i didn’t mind standing in front of a hot stove.
i’m so glad i finally made this sweet potato and lentil chili, i really enjoyed it. thank god, because there are lots of leftovers. tom isn’t a fan of chili- vegan or not, but he said “i can see how you’d like this…it tastes good for having vegetables in it.” i’m taking that as a positive review. 🙂
i have to admit though that i didn’t follow any of the measurements…i didn’t leave anything out, and the only substitution i made was yellow lentils for red lentils…but i was too lazy to take out the measuring cups and spoons…so teaspoons became pinches and cups became handfuls…i have a feeling if i followed the recipe perfectly, this would have turned out even better.
i had my portion with some food should taste good tortilla chips and a sprinkling of cilantro.
