i’m so easily food influenced! i hate missing out on food, or a joint meal. i really need to start hating missing out on being skinny!
anyway, tom had a blt for lunch. i needed to join in on the sandwich fun, so i had a cl (cheese and lettuce) sandwich. so plain, i know…but sometimes simple sandwiches like this really do it for me. i had an apple on the side.
and a cookie afterward. tom finished off the rest today, so no more temptation there! *phew*
i found myself craving more sweets a couple hours later, so i had two of these fruit leathers that michelle sent me. yum!
i had to get a bit creative for dinner…usually i know what i’ll be making for dinner by lunch time, but 8PM rolled around and i really had no idea what to make.
i threw some chopped up green beans into the boiling water to cook with the agnolotti. i then tossed the drained pasta and green beans with a little bit of olive oil and sprinkled with feta. tom’s mix had agnolotti, green beans, bacon and italian cheeses (i should have taken a pic- the colors were very italian flag-y!)
oh my gosh, the agnolotti was sooo good! i love mushrooms, so of course loved the taste! the true testament to how good this pasta is, is that tommy finished his plate. the boy always picks out mushrooms and refuses to even taste them…so i was sneaky and didn’t tell him what was in the pasta. i thought he’d catch on though…but he didn’t! he did ask what they were though, but we decided it was best that he didn’t know 😀 i thought the mushroom taste was pretty distinct though, and there were plenty of large chunks- so it just goes to show that my picky eater is always refusing to eat things he hasn’t even tried! grr! good news is that since he still doesn’t know what’s in the agnolotti, i can buy these for us again when they’re available! 😀
hmm…and i almost left out this confession: i had one too many spoonfuls of this while making dinner.
