green thumb

May 6, 2009

happy wednesday 🙂

i don’t think i mentioned this yet, but i decided to participate in jenna & gena’s raw challenge. basically, on every wednesday for the month of may, we’re supposed to eat one raw meal and one raw snack.

we’ve all heard the benefits of a raw lifestyle…and i could sure use some of them myself- mostly the clear skin, better digestion, more energy part! i don’t know if one raw meal a week is really going to do that for me, but no harm in giving it a try, right? especially since it’s so easy!

considering i don’t have that much produce right now, i took the easy way out and made a raw smoothie for breakfast as my raw meal of the day. (big surprise, right?) it actually wasn’t as easy as i thought, because i know very little about raw foods, and had to do a bit of googling this morning to find out if i could use certain things (like honey and coconut milk). well, in the end, i decided to keep it really simple…

avobanapple smoothie:

  • 1/2 banana
  • 1/2 avocado
  • 1 small golden delicious apple (peeled, cus my blender sucks and i didn’t want a gritty smoothie)
  • handful of ice
  • splash of water

ready to blend:

and eaten soup style:

this was so good! sweet, creamy, refreshing….perfect for warm weather! i will definitely be making this again!

and to continue with the green-ness…i have to show you what i was greeted with this morning.

look at how much my babies grew in just one week!

mister squash says hello! he just had a huge growth spurt overnight.

and my herbies look like they’ll be ready to eat in no time!

i got this herb kit at home depot. isn’t it so cute? i don’t have a green thumb at all (i’ve killed like 238, 498 house plants in the past few years) so seeing these babies grow each morning is beyond exciting :D!
