raw challenge wednesday

i stocked up on produce yesterday to prepare myself for another raw challenge (1 meal & 1 snack) wednesday.

i had the same raw smoothie i had last week with the addition of spinach.

this smoothie “soup” had 1/3 avocado, 1 golden delicious apple, 1 small banana, handful of spinach, and ice. i really love this combo, and how creamy the avocado makes it!

my raw snack for the day was cucumber boats stuffed with mashed avocado, topped with shredded carrot, and sprinkled with salt and pepper. i think cucumber + avocado are a perfect combo (probably because it reminds me of california rolls).

i bought a big bag of spinach because i thought i needed more iron in my diet…but then i found that some websites say that spinach is an iron inhibitor? either way it’s still good for you and yummy! i had sauteed spinach, baked tofu, and berries. the berries were 3/$5 and they are the sweetest i’ve had all year. score!

i wanted more berries so i incorporated it into my dinner. i thought this yogurt bowl up in a moment of genius yesterday.

pb & jelly yogurt: plain nf yogurt w/ sliced strawberries, raspberry preserves and crumbled 1/3 pb cookie larabar. i’m so in love with this larabar flavor! i couldn’t try it earlier because i tried my first larabar during the pb recall… glad i finally gave it a try now- it’s so good!

my dessert, eaten a couple hours later, ended up being pretty similar to my dinner 🙂 cookies and cream ice cream with sliced strawberries and raspberry preserves.

    Your smoothie/soup looks great. I wouldn’t like it b/c it has avocado and banana in it – two of my ick foods. But I love the color and consistency of it.

    the peanut butter larabars are my favorite! Have you tried the coconut cream pie flavor? That one is soooo good! I remember when I first tried the PB larabar a week later it was on recall for what seemed like FOREVER!

    Ripe summer berries are so tasty.

    Your avocado boats are so cute! I love the idea of stuffing ’em with avocado and grated carrots.

    I’ve always heard that spinach is full of iron. Maybe it depends on whether you eat it raw or cooked?

    I haven’t had a PB Cookie Larabar since before the recall – I think I might try to make them!

    i am loving your smoothie/soup. what a pretty color! i love adding avocados to smoothies- it makes them incredibly creamy.

    and lovin the concoction you created in your moment of genius. pb and jelly anything is an A+ in my book.
