friday the third

happy fourth y’all!

i have no idea how we’re spending the day, but before i even think about that, let me recap the third of july.

my morning started with a lovely bowl of cabot strawberry greek yogurt, kashi summer berry granola, banana, and peach slices.

tom had a half day at work so i decided to hold off lunch til he got home. i had a serving of kashi tlc country cheddar crackers while waiting/making lunch. these are good…but not cheesy enough for me…i think i ate more than i would have if they had a stronger cheese flavor to them….i guess i was hoping for cheez-its.

i tried another new product for lunch: a gardenburger veggie medley patty.

i liked it! it’s basically brown rice and some veggies clumped together…all that rice made the patty a little dry but overall i liked the flavor and texture. i prefer the dr.praeger’s burgers though…and neither come close to homemade split pea burgers!

i had it alongside a mixed greens salad with cukes, carrot slivers, blackberries and feta.

usually i make tommy his own meal but yesterday he ate pretty much the same thing…and i was very proud of him for finishing it!

to make up for his “healthy” lunch, he had pizza for dinner…

when i saw tom picking off all the bell peppers from the frozen pizza before putting it in the oven, i asked him to save them so i could incorporate them into my own dinner.

i decided to my own lil’ pizza using a ww tortilla. it was topped with tomato sauce, spinach, cheese, and the fire-roasted bell peppers from tom’s pizza.

for dessert, i had a plum and a blondie that tasted an awful like the freezer where i found it, but somehow i managed to finish it anyway πŸ™‚

our exciting friday night was spent at the movies. i brought along my own snackie of chocolate covered almonds. hear that? i totally ignored the sour patch kids at the concession stand! πŸ˜€

i ate one (obviously) while we were at home, and enjoyed half the bag at the movie. we watched the proposal…and i so want that puppy in the movie. isn’t he the cutest thing ever?

well, i don’t know what we’re going to be doing today. tom is being all restless, but for some reason i’m always the one who has to think of an activity to do! sheesh!

i still have to think of something to do during the day, but at night we’ll be going into boston to watch the fireworks by the river. i better get planning i don’t want to miss a minute more of this gorgeous weather today!

    Have you ever tried chocolate covered macadamias? They’re also really yummy πŸ™‚

    I love how most boys have such a hard time eating their veggies lol

    Watching the fireworks by the river sounds like an awesome plan! Oooh the pizza looks so delicious with the sauce and melty cheese. I’ve been hankering after pizza these days, but haven’t had my fix 😦

    Great healthy pizza! Although I would have just eaten the Digiornos. I love that pizza. I haven’t had one in months – maybe it’s time for me to try it again. I should limit myself to it 2-3 a year.
    Love the idea of split pea burgers.
