ed&bv’s peanut passion sauce

woohoo! my wish came true and we had a clear, rain-free night…thank you weather gods!

i spent a lovely night with the bf at the lantern festival. it’s one of my most favoritest events in boston…i’ll post pics tomorrow morning after i sort through them.

for now, i have some meals to share…breakfast was plain chobani topped with tj’s high fiber cereal. SO freakin’ yummy! i try to forget how delicious greek yogurt is so that i’ll feel better when i pick up that tub of more affordable plain yogurt…but man oh man…it’s just so good!

for lunchie, i had a green smoothie (soymilk, banana, spinach, ice) and a quesadilla (ww tortilla, shredded cheese, salsa!)

why is melted cheese so wonderful?

after lunch, i got my domestic goddess on and cleaned the apartment a bit, loaded the dishwasher and got started on a new recipe.

i made dreena burton’s peanut passion sauce from eat, drink & be vegan. dreena claims that this sauce is a “must in your recipe repertoire” and since the woman is a proven genius in the kitchen…who are we to argue, right?

my version was actually a peanut cashew passion sauce…i used 1/4 cup pb and 1/4 cup cashew butter since i was running low on both. it turned out great! plus it was one super easy peanut sauce to make- even with my sad little fake magic bullet. i love how she offers so many ways to use this sauce too! i thinned half with some coconut milk (the version pictured above) which makes it a great soba sauce or salad dressing. or you can also mix it with some white beans to make a thicker dip. the only change i would make next time is to cut back on the garlic (which she suggests as an option anyway) cus i have major garlic breath right now!

i’m already looking forward to having some more tomorrow. you’ll also have to wait til them to see how i used the sauce today cus my connection is so impossibly slow again that if i try to upload anymore pics i’ll never get to bed!

    After perusing ed&bv at the library, I knew I had to have it! I am now the proud owner of this genius cookbook. I’ve made a handful of the recipes, and would be hard-pressed to choose a favorite. The super charge me cookies are amazing, of course.

    I’ve never tried dreena’s recipes but I love anything with nuts and coconut milk. sounds like a great, Asian sauce.

    I actually just bookmarked that one the other day. So glad to hear that it’s yummy šŸ™‚ I tried many of her recipes including cheesy cashew dip, a maple syrup-balsamic sauce, super charge me cookies…All wonderful!

    Speaking of wonderful, that cheesy quesadilla looks sooo good!
