veggie tales

i finished up all the veggies in the fridge yesterday morning with this juice.

i was in the mood for a sandwich for lunch and i made one with sabra garlic hummus and trader joe’s cilantro chive yogurt dip instead. i know it looks sad, but i was out of veggies, remember?

and then dinner was eaten at the yelp event.

this morning, my tummy needed some carbs. i had almond butter and raspberry preserves on nature’s pride 12-grain and strawberries on the side.

i skipped lunch- i wasn’t very hungry today and caught up doing other important things like looking at poodle pictures and grocery shopping.

i restocked the vegetables, so i made myself a mexican-y salad topped with salsa, yogurt dip, crushed multi-grain tortilla chips and cilantro.

for dessert, i had brown cow greek yogurt with strawberries, chocolate and walnuts. i am so in love with this combo!

so if you can’t tell…i’m in a food rut…i like to eat the same things over and over…and honestly, i don’t mind cus i really really love pb & j sandwiches (speaking of which, i need to win some nuttZo!). for the sake of keeping things interesting for y’all and my taste buds, i’m going to make an effort to mix things up.

it shouldn’t be too hard because i just checked out this amaaaze cookbook from the library:

the vegetable dishes i can’t live without by mollie katzen.

i love love LOVE the recipes in this book…i want to try every last one and they are so uncomplicated that i just may.

i was so excited to get my veg on that i even picked up a couple out of my comfort-zone veggies at the market today- an eggplant and a butternut squash!

well, just had to share how adorable this book is! i’ll let you know when i actually try a recipe from it πŸ™‚

    I get stuck in food ruts too and I collect all these great recipes to try out but they just seem too complicated with too many ingredients for one person!

    I used to check out Mollie Katzen’s books from the library just for fun! I don’t think I tried very many recipes, but the ones I tried were great πŸ™‚

    Yay, I’m so glad that you like that yogurt dip! It sounds amazing with hummus on a sandwich too.

    Haha, sometimes I don’t care if I’m in a food rut too, because I do love PB&J sammies. Although, I try to eat various foods for sake of nutrition. Got to get those veggies in some how.

    I love how you cut up your sammie into small little squares!! allows you to have more time to enjoy the deliciousness πŸ™‚
    love greek yogurt with strawberries & chocolate chips. adds some sweetness to the tartness.
